一起看看第一場的漬鰛魚是如何製作的

講師王水蓮女士,從小在漁村中長大,在那個物資缺乏、貧困的年代,每家戶的小孩和婦女們,皆會去海邊撿別人不要的剩魚(鰛魚),為了溫飽使用醃漬的方式保存,她記得媽媽會使用漬鰛魚來蒸五花肉,每每有這道菜都能吃上很多碗飯!漬鰛魚要怎麼醃漬呢?


作法:

1.將鰛魚清洗瀝乾,放入粗鹽(鰛魚16斤:粗鹽3斤)均勻搓揉

2.置於玻璃瓶中,在最上方和下方在放入粗鹽,封罐

3.30天後即可食用!
